I've been using Windows 7 to plug in and unplug external HDDs without any issues. I'm wondering if it's just as easy with Linux Mint Cinnamon or if there are additional steps I need to take before unplugging the drive. I really don't want to risk losing my data!

Yeah, you should definitely use the eject option in the file manager. It takes hardly any time and can save you a lot of hassle compared to the potential risks of data loss. But sure, if you just want to risk it all and unplug it, go ahead, but don't say I didn't warn you!
