I'm considering downgrading from my 9800x3d to a 265k because I can get about 150 euros back from the sale. The 265k costs around 250 euros on German Amazon, and I can sell my 9800x3d for roughly 400 euros. Is this a good move or should I just stick with what I have?

Make sure to take into account how much the motherboard will cost too. It can really add up, and you might end up saving less than you think. If you really need the cash, it could work, but otherwise, you might want to enjoy your current CPU a bit longer.
Honestly, I wouldn't recommend it. Swapping out your entire platform just to save maybe 100 bucks seems like a pretty bad deal. You'd be giving up on your current setup, which is still solid, for a CPU that's not going to give you huge gains. Stick with the 9800x3d if you can!

If you're set on a change, why not consider downgrading within the same Intel platform? You could look into options like the 7600x or even a solid used Intel setup rather than going for the 265k. You might find better performance without needing to swap out everything.
