Budget Desktop Build for Gaming: Need Your Feedback

Hey everyone! I'm planning to replace two aging desktop PCs for family members on a tight budget, and I'd love your thoughts on my setup. They primarily use these machines for gaming, but they're not super tech-savvy, so I want to make sure they can run Windows 11 without any hiccups.

Here are the current specs for the PCs:

PC 1:
- Motherboard: ASRock z170 extreme4
- CPU: i5-6500 3.20GHz
- Graphics Card: NVIDIA GeForce GTX 1070
- RAM: 16GB Corsair Vengeance DDR3

PC 2:
- Motherboard: ASRock B75 Pro3-M
- CPU: i5-3470 u/3.20GHz
- Graphics Card: Asus Dual GeForce GTX 1650 MINI
- RAM: 16GB

I plan to keep the graphics cards and build new systems with the following components:
- 2 x AMD Ryzen 5 5600 (6 Core, 12 Threads, 4.4GHz)
- 2 x Gigabyte B550M K AM4 mATX Motherboard
- 2 x SanDisk SSD PLUS 1TB M.2 NVMe PCIe Gen 3.0 Internal SSD
- 2 x Kingston FURY Beast DDR4 RGB 16GB (2 x 8GB) 3600MT/s CL17 Desktop RAM

This setup looks promising for Windows 11, and I'm hoping it won't break the bank. However, I just realized I'll also need power supplies! Are there any red flags in my plan or tips on how I could save some money? I really want to stick with Windows since the users are comfortable with it and know the differences from Windows 10 to 11.
