I'm looking to upgrade my gaming PC and I've been checking out Gen 4 SSDs. I've noticed that 7000 MB/s ones are significantly pricier than the 5000 MB/s models by about $20 to $30. With my RX 9070, what speed do I really need for an optimal gaming experience?

Remember that the advertised speeds are peak speeds under ideal conditions, which you won't hit in regular use. What's more important for performance is the IOPS, which is where SSDs shine compared to HDDs.
Honestly, for gaming, the difference in speed doesn't matter that much. Most games won't benefit from the higher speeds of Gen 4 compared to Gen 3.
Most gamers won't notice a difference between a slow SSD and a fast one. I recommend just getting the cheapest reliable Gen 3 or 4 NVMe drive you can find. Gen 5 isn't worth the extra cash unless you have specific needs.
