I'm currently using a setup with one SSD for my operating system and game launchers, another SSD specifically for games, and an HDD for everything else like media and personal documents. I've been recording my gameplay sessions with Nvidia ShadowPlay, and I'm wondering if recording directly onto the HDD negatively impacts performance. Will it slow down my gameplay in any way?

There might be a slight impact if your PC is working hard processing and moving data, but unless you're maxing out your system with high graphics settings, it probably won't be a significant issue.
You should be fine unless you're recording at crazy resolutions like 8k. For regular gameplay, an HDD can handle it without breaking a sweat.
Generally, recording your gameplay on an HDD shouldn't hurt your performance unless you're using extremely high bitrates. Most hard drives can handle sequential write speeds of around 100MB/s, which is quite sufficient for normal gameplay recording.
