Why does my monitor resolution drop to 800×600 when I set it to 100Hz?

I just got my new 27" LG QHD IPS monitor (model 27U631A-B). When I switch the display setting to 100Hz, the resolution automatically changes to 800x600. I'm running it with an Acer Intel Arc B580 GPU with the latest drivers, on a Ryzen 7 7700 setup with 64GB RAM. I have four out of five monitors connected, but the other monitors are 1080p and two are plugged into the motherboard display ports. Does anyone have a fix for this?

First off, double-check that your GPU drivers are installed properly and that the monitor is plugged directly into the GPU, not the motherboard. If it is connected correctly, see if you can still switch back to 1440p in the display settings after changing to 100Hz.

Yes, my drivers are definitely installed, and the monitor is connected to the GPU. I can select 1440p but it just drops back to 60Hz.

800x600 is a throwback! You might want to disconnect all other monitors and only connect the LG to your GPU. If that allows you to get 1440p at 100Hz, then the issue likely isn’t with the monitor itself.

I tried that, and sadly, no luck. I did a clean reinstall of the Intel drivers too. I even checked the user manual and it confirms that the LG supports 2560x1440 at 100Hz. It’s got to be a cable issue, maybe my DP to HDMI cable can't handle 1440p at 100Hz?
