I'm considering an upgrade from my current 4070 to either a 5070 Ti or a 5080. The 5070 Ti is priced at about 900 euros, while the 5080 costs around 1180 euros — a difference of 300 euros. One concern is that I might have to upgrade my power supply since I have an 850W PSU. I'm currently gaming at 1080p but want to move to 1440p soon. I'm curious if the 5080 is worth the extra cost, or if the 5070 Ti will perform well enough for my gaming needs. The games I typically play include The Finals, Deadlock (which is heavily CPU bound), and Battlefield 6, where I'm getting about 144fps but want more fluidity. Any thoughts?

I'd recommend focusing on getting a good monitor first. Consider a 240Hz or even 360Hz 1440P monitor. After that, go for the 5070 Ti or even a 9070 XT if possible. You’ll want to make sure your gaming experience is smooth before upgrading the GPU.
Honestly, the 5070 Ti does a fantastic job at 1440p, and the 5080 isn't going to give you too much of a boost in performance for that resolution. I'd stick with the cheaper option unless you have a specific need for higher frame rates.
