You might want to consider the Ryzen 9 7900X. It's powerful with 12 cores and 24 threads, plus it can reach up to 5.6GHz. I found it for around 312€ where I live, which is just a tad over your budget.
I'd go for the Ryzen 7 9700X instead if the prices are close. It uses less power, runs cooler, and performs better in about 95% of games.
