I'm looking to install a new 2TB drive to use as my Windows OS C drive. I've come across a lot of advice about using cloning software for this process, but I'm not sure which one is the best option. Any suggestions on software to use and tips on how to go about it?

Consider using Clonezilla! Just install your new SSD, boot from Clonezilla, and clone your old drive to the new one. Once that's done, you can wipe the old drive and you'll be good to go!

You could also create a USB version of Hiren's BootCD. Boot from the USB with both drives installed, go to the "Hard Disk Tools - Imaging" submenu, and use either Lazesoft or Macrium Reflect to do the cloning. They’re pretty user-friendly! After cloning, just disconnect the old drive and you’ll boot from the new one automatically.
