Total cost is €1295. Additionally, I'm also thinking about upgrading to the RX 9060 XT 16GB, which costs an extra €80. Is that worth it? I'm also aiming for a solid 60fps for gaming.

For 1440p gaming at high or ultra settings, I think you'd be better off with at least an RX 9070 or RTX 5070. They might be pricier, but they'll give you a better FPS depending on the games you play.
I noticed you mentioned the RX 9060 XT, but isn't that a typo? The 5060 might suit your needs, but realize you'll probably need some upscaling to maintain good framerates on ultra settings.
Your build looks solid, but you might want to consider a 2TB SSD instead of the 1TB Samsung 990 Pro for a similar price. More storage is always helpful for games!
