I just got myself an RTX 5070 Ti, but I wasn't aware it needs three PCIe power cables. Currently, I'm using two separate PCIe cables plus one pigtail connector. I noticed that Corsair offers a 12V-2x6 adapter that requires only two PCIe cables from the PSU, and I'm curious if using that would be a safe option for my setup. Just so you know, I'm pairing it with an Intel i5-12400F, which has a low power draw.

I’m in the same boat, about to get an RTX 5070 Ti and using an RM650x too. Generally, Corsair PSUs are reliable, and the RM650x is a solid choice. The 5070 Ti peaks around 300-350W, which leaves you with good overhead for your CPU and other components. The i5-12400F only pulls about 117W at peak, so you should be safe.
You should be fine using the pigtail for now. Corsair's PCIe plugs can handle 300W, so having two cables powering three connectors is doable. If you plan to upgrade in the future, consider getting a native 12V-2x6 cable compatible with your PSU, which is a Type4 Corsair cable.
Nvidia does recommend a 750W PSU for the 5070 Ti, but in reality, it might actually work with a 650W supply, especially since your CPU isn’t high-drain. Just keep in mind that those recommendations are often padded for safety.
