I recently purchased a Dell S2725QS monitor, which is advertised as capable of 4K at 120fps. While I don't expect my GTX 1080 to reach that lofty goal, I'd like to lower the resolution and at least try to hit 120fps. However, despite experimenting with various games, tweaking settings in the Nvidia control panel, and trying both DisplayPort and HDMI cables, I can't seem to exceed 60Hz. I've checked my Windows and Nvidia settings multiple times, and I'm out of ideas on how to resolve this. Interestingly, when I connect my PS5 to the monitor, it runs games flawlessly without any issues. Can anyone suggest what I might be missing?

It sounds like you might not have set your monitor to the 120Hz refresh rate in your settings. Another possibility is that the cable or the port type you're using isn't capable of reaching that performance level. I had a similar issue with my old 1070 when I first got it—turned out to be the cable or the port type, which was causing the limits. Double-check that you're selecting the right settings in your control panel. Also, make sure the cable is up to standard for the desired refresh rate.

I've gone through the Nvidia and Windows settings many times, so I doubt that's the issue. If the cable were faulty, would I still see the option to switch to 120Hz? The settings allow me to select it, but it never actually displays over 60fps. I'm also ensuring that any in-game FPS limits are turned off. By the way, my DisplayPort cable is a bit old—could that be affecting anything?
