I'm currently using a 3060 graphics card, and my friend is thinking of selling his 2070 Super for $75. I'm curious if the performance difference justifies the cost. Is the 2070 Super significantly better than my 3060?

I found that the 2070 Super is only slightly better in performance—around 5% compared to the 3060's 12GB. I wouldn't pay $75 for that upgrade. If you could sell your 3060 for more than $75, then it might make sense, but otherwise, I'd pass.
In my research, the 3060 and 2070 Super are very similar in performance, so swapping either way isn’t really worth the money. Just keep your 3060; it's a solid card.
