My work mainly involves video editing, meetings, and some AI tasks, so I need something powerful but not overly demanding. If you're looking for something cheaper, I found a solid build for just $2270 with less RGB and a better GPU. There’s another one for $2306 that keeps the RGB but still has a better GPU than what you’ve listed. If productivity tasks are your focus, the 5080 might be worth the investment, but personally, I'd lean towards the 5070 Ti.
Quick question though, why don’t you include the price for the operating system?
You can definitely save a lot by getting a 5070 Ti for approximately $750 instead of the 4080. Also, regarding the PSU and motherboard, an 850W would suffice—check out options like the Core Reactor II or Pure Power 13M for a cheaper alternative. Lastly, for CPU cooling, something like the Liquid Freezer III Pro 360 can save you some cash too.

I'd suggest going for a 5080 instead of the more expensive options you have listed. It's a solid choice that won’t break the bank. Plus, if you're really looking to save, maybe consider the B650E motherboard instead of pricier models; it should work fine for your needs.
Consider swapping out your power supply for the Montech Century II; it's nearly half the price of what you've chosen. Also, those RAM prices look really high. I got 32GB of Cl 30 6k RAM for around $90 a few months ago, which seems much more reasonable!
