Now I'm looking at a 32GB (2x16GB) Adata XPG Lancer 6400MHz CL 32 kit for $295. With all that in mind, do you think I snagged a decent deal? I've been waiting years to build a new rig and was planning to do it in January, but with the current market trends, I might just jump in and build next week since I keep seeing prices like $400 or more for similar kits.

That price seems a bit steep, especially if you’re looking for the best bang for your buck. Have you checked if there are any sales or discounts on different platforms? Sometimes you can find better deals elsewhere if you're willing to look around.
