My PC Keeps Rebooting When I Start a Game—Any Ideas?

I recently upgraded my graphics card from an RTX 4070 to an RX 9070 XT, and I also changed my power supply from a 550W to an NZXT 1200W. However, whenever I try to start a game, it loads up to the menu but then my PC reboots just before the game fully loads. I've used DDU to clean the drivers, and the GPU's wattage is only drawing 50W before the reboot. Strangely enough, the PSU works perfectly fine with my old GTX 1060.

Have you checked the temperatures of your CPU and GPU? High temperatures can cause shutdowns. It’s interesting that HWMonitor only shows limited data about the GPU. You might want to try another monitoring tool or check your GPU software for details.

In HWMonitor, it seems I'm only getting basic stats. On AMD's Adrenalin software, my GPU is at around 40 degrees, but the memory is at 60, and my CPU is also sitting around 40 degrees. Would this be too high?
