I'll be using the RAM (2 Kingston DDR5 sticks, 16 GB each) in my laptop in the meantime, so I'm looking for advice on whether it's worth buying now or holding off.

It's tough to say when prices will stabilize, but honestly, I wouldn't expect RAM prices to drop significantly anytime soon. Also, just a heads-up: you can't use that RAM in your laptop, even if it's a gaming model.
By the way, those two sticks you're considering cost €130 together and they're brand new, which is a good deal! Just keep in mind that new laptops might get affected by these price spikes.
