I'm assembling a PC with my dad and managed to grab three 8GB sticks of DDR4 RAM at 2666MHz just before the RAM prices skyrocketed. I'm thinking of adding one more stick to make a total of 32GB. Will this be sufficient for a Ryzen 5 5600 and 9060XT combo while gaming at 1440p, or will the slower RAM speed be a significant issue?

32GB is a solid amount, but be mindful that mixing RAM sticks can lead to issues. Ensure the additional stick is the same model as the others for best compatibility!
16GB usually works for most gaming and tasks, so you should be alright with that amount.
Having 32GB is definitely more than enough in my opinion. While 16GB is on the lower end, 64GB is excessive—so 32GB hits the sweet spot!
It’s not the most optimal choice, but for your specific setup and usage, it should get the job done just fine.
You can find RAM scaling benchmarks for the Ryzen 5 5600X, and while lower speeds aren’t ideal, it’s manageable considering the current market. Some games might react differently, but you can make it work. Check out Tom's Hardware for RAM scaling tests. Also, Intel CPUs like the 12400 have similar behavior with lower RAM speeds.
You should be fine, but to get better performance, you might want to overclock your RAM. It could help improve your frame rates!

I think 24GB is actually the perfect sweet spot; 32GB may be pushing it a bit. Too bad 24GB kits are rare for desktops!
