I've recently built a PC with a Ryzen 7 7700x processor and 2x 16 GB G.Skill Trident Z5 Neo RAM running at 6000MHz CL30, paired with an MSI Tomahawk X670E motherboard. However, I've encountered a problem where my system won't boot when I enable the EXPO profile. Instead, I have to revert to the default RAM speeds after flashing the BIOS. Does anyone have any ideas on what might be causing this? Additionally, would you recommend a different motherboard that could handle stable 6000MHz with my CPU?

It sounds like you might be running into compatibility issues with the memory controller. EXPO or XMP profiles aren't always guaranteed to work perfectly. Make sure the RAM speed of 6000 MT/s is indeed your EXPO speed and not just the base speed. Also, check if your specific RAM model is listed on the motherboard's QVL list for compatibility. The memory controller is on the CPU, not the motherboard, so if you're still facing issues, it may be worth trying a different CPU. Lastly, have you considered trying the other RAM slots? Sometimes just switching slots can resolve boot issues.
You could find that the base speed for your RAM is fine around 4800MT/s, but it's important to note that not all motherboards handle high speeds well. If you've confirmed that your RAM is on the QVL and are still facing issues, it could be beneficial to test the other RAM slots as sometimes those have better connections for higher speeds. As for a different motherboard, just consider those that have proven stable with 6000MHz, but most modern boards should handle these speeds well if everything else is compatible.
