I've got an old Toshiba laptop, possibly a Satellite C850, and the bottom left latch has completely popped out. Now, I can't close the laptop without it detaching the plastic on the monitor, which isn't great. Is there a way to fix this myself without needing to take it to a repair shop?

That sounds rough! From the looks of it, the damage might be pretty serious. It could be worth trying to gently push the latch back into place, but be super careful not to bend the monitor too much. Honestly, if that doesn’t work, it might be time to think about getting a newer model since repairing an old one could cost more than just buying something new.
I think your bottom latch is likely stuck. If you can pop the metal part out, try to close it carefully—but I totally get the concern about risking damage to the screen. If you aren’t comfortable forcing it back in place, taking it to a repair professional might be the safer route in the end.
