I'm currently using an Asus Crosshair X870E Apex with a 9800X3D, but I've just bought an Asus B850 WiFi BTF, which will arrive tomorrow. I'm curious about what I might be losing by making this switch. Is it a bad idea, or will I likely not notice any difference?

For gaming, you probably won't see much of a difference unless you really want specific features from the old board. Most games run just fine on most boards.
