I'm looking to upgrade my graphics card and I'm torn between the RTX 5070, RX 9070, and RX 9070 XT. I currently have a Ryzen 5 9600X and 32GB of DDR5 RAM, with an RX 6800 GPU. My 750W gold PSU has been working well, but I'm starting to hit limits with 1440p gaming, especially since the Silent Hill 2 Remake is now my favorite game. Here are the lowest prices I've found in my area (France): RTX 5070 for 570 euros (about 667 USD), RX 9070 for 600 euros (around 703 USD), and RX 9070 XT for 700 euros (approximately 820 USD). I'm concerned if the 750W PSU is enough for the RX 9070 XT, and whether I'll need to upgrade to an 850W PSU for that. Any advice would be greatly appreciated!

Your 750W PSU should be fine for the RX 9070 XT, but if you want a safer bet, the RX 9070 is a more budget-friendly option. It's just a bit less power-hungry and still offers solid performance.
Honestly, I'd lean towards the RX 9070 unless you really want that extra 15-20% performance from the RX 9070 XT. It might be more economical for you.

I’m worried though because I read the RX 9070 XT can pull as much as 330W, while my RX 6800 only goes to 225W. Not sure if that’s worth the risk.
