I just upgraded from a 3070 to a 5070 Ti and I've seen some discussions about lower-rated power supplies, like 'bronze' ones, not being ideal. Should I be concerned about my current EVGA 850 BQ PSU? Thanks for any insight!

You should be fine with the EVGA 850 BQ. Just make sure to use two separate cables instead of a pigtail to prevent any issues. While the 5070 Ti does require a bit more power, it's not hugely different from the 3070 in terms of wattage. You’ll be good to go!
