I'm a heavy gamer and I also do some streaming and productivity work. I'm considering whether 32GB of RAM will be enough for my needs, or if I should just invest in 64GB now to ensure I don't run into issues down the line. Based on current and upcoming games, will 32GB last for about five years, or is it better to opt for a larger capacity right away?

32GB is the sweet spot right now for gaming and multitasking. Unless you're planning to run tons of demanding applications simultaneously, 64GB might be overkill, at least for the next few years. Most games currently don’t utilize more than 20GB of RAM efficiently during gameplay.
If you primarily game and keep a few tabs open, 32GB will be plenty for the foreseeable future. Gaming has been moving towards optimizing usage, so 32GB should be adequate for quite some time unless you're diving into heavy production work.

Exactly! 16GB is fine, but 32GB is just right.
