I've heard that I don't really need all 14 cores of the 14600KF for gaming, and that the 6 P-cores should be sufficient. I'm wondering if I should set the affinity for the games I play to use only those P-cores, since they are said to offer better gaming performance. Will this make a noticeable difference, or are there any downsides to doing this?

Just leave it alone and run it like normal—no need to mess with core settings!
If performance is your main concern, you could try setting core affinity for different applications. Just make sure your Discord and web browser run on E-cores and keep your games on the P-cores for optimal performance.
Honestly, I'd just keep all the cores on. In most cases, it doesn't make much of a difference, and sometimes having the extra cores active can actually be beneficial, so it's probably best to leave them as they are.
I wouldn't change anything unless you're willing to do some benchmarking. That's really the best way to see what works for your setup without any guesswork.
From my experience, only a few games have compatibility issues with that setup (looking at you, Stranger of Paradise). It's probably safest to just leave it on default settings and let it manage itself.
