I'm currently using an iPad with iOS 16.2, but to access more recent apps, I need to upgrade to at least iOS 16.4. However, I'm reluctant to install the latest version because I believe it could slow down my device, impact battery life, and bring on headaches due to the new interface changes. Is there a way for me to update to an older version (like 16.4 or something similar), considering that all previous IPSWs seem to be unsigned? I've been without updates for three years now and really feel the difference, so if there's no way to make this happen, I'd appreciate an honest answer.

Unfortunately, you can't really control how mobile device updates work. Both iOS and Android prefer to push the latest version, and they don’t usually allow you to pick specific versions in between.
Do you even know if the iPad can go up to iOS 26? It might only support iOS 16, 17, or 18.
I suggest just going for the latest update. It provides important security patches, and eventually, you'll face the same issue of apps not updating or being incompatible.

Not getting those security updates can really be a mistake. That's why it's tough for users to downgrade on their own. Just upgrade to the latest version and get it over with—if you dislike the new visuals, you can often disable them. You might find the battery life changes aren’t as severe as expected.
Can you not hold the shift key while hitting upgrade in iTunes anymore? There used to be ways to choose a specific IPSW version for upgrades.
While ignoring security updates is tempting, I’m surprised people don’t appreciate the risks involved. If you really want to switch, download a signed IPSW on your PC, put your iPad in DFU mode, connect it, and select Restore while holding the shift/Options key to choose the downloaded iOS. Just be sure to back everything up first, including passwords and media.
