It's cooled with an MSI 360mm AIO Cooler and has an 850W power supply labeled just as "PSU 850W." The whole setup costs £2,399, and it's mostly meant for high-end gaming—specifically for running games like DCS and Cyberpunk 2077 at max settings. Is this a good deal, or does anything here raise a red flag?

The main concern is that LGA1700 is kind of a dead end—not much upgrade potential later on unless you're ready to buy a whole new motherboard and CPU combo.
I don't think anyone really needs to upgrade the i9-14900K and RTX 5080 for at least five years!
