I'm trying to figure out where applications get installed on Linux Mint if I haven't changed any default settings. Specifically, on which drive do they end up? Additionally, is it possible to choose a different drive for installations?

When you install apps on Linux Mint, they typically integrate directly into the system rather than going to a single folder like "Program Files" on Windows. Different parts of the app get distributed across the filesystem. If you're thinking about installing apps on multiple drives, you might need to explore custom configurations, as installations usually default to the main drive.

If you're considering switching to Linux Mint, just know that the OS and programs generally reside on the same drive where you installed the OS unless you set it up otherwise during installation. You can definitely set up a multi-drive system, but apps will default to the main OS drive unless configured differently.
