We're currently utilizing SMTP2GO for our scan-to-email function but need to switch to a different approach. Our email-to-fax service requires the scans to be routed through Microsoft. Since we only have a few machines and they aren't all behind the same public IP, I'm considering OAuth as it could be safer than opening up a relay in our network. Does anyone have a good guide for setting up OAuth on Canon or Ricoh machines?

I'm not so sure those models support OAuth2. It might be worth searching online with your printer make and model combined with 'OAuth SMTP setup' to see if you can find anything helpful.
If you're looking for a more centralized solution, consider using PaperCut for scanning. Alternatively, you might want to check out Toshiba printers—they could streamline your process.
Just a bit of a side note, back in the day, we used Hylafax for self-hosting a fax-to-email solution. It might be something to consider if you're trying to go a different route.
First, check if your MFP printers need a firmware update. We found that updating our Epson and Canon printers allowed us to use OAuth v2 seamlessly. Once updated, the option for authentication popped up. Just use the same account as before, and it’ll instruct you to authenticate through a Microsoft website. Our first device did require admin approval on the app through Entra, but after that, it was smooth sailing! Just a note: we have an old Ricoh that we can't update due to our firewall and its location, so we might just stop scanning from that.
