If you do the upgrade to a 5080, just know you might be looking at around a 20% bottleneck with the 3700X. Higher resolutions can help mitigate that, but given the requirements of latest games, I'd say you're at the bare minimum with the 3700X.
It really depends on your gaming resolution. If you're gaming at 4K, the 5080 should be fine, but if it's lower than that, I would strongly suggest upgrading your CPU, ideally to something with X3D technology. You might be leaving a ton of performance on the table otherwise.
