Performance can vary dramatically from game to game. Just because you've upgraded doesn't guarantee a big boost. If you're playing games that are more CPU-intensive, like World of Warcraft or those using the Unreal Engine 4, your i7-9700k might be holding you back. A 5060 Ti is about 20-30% faster, so if your frames are just slightly higher in CPU-bound scenarios, that's normal. You could try dialing up the graphics settings and see if it stabilizes your FPS.
