I'm looking for some advice about upgrading RAM. Once I install my new RAM sticks, do I have to go back into the BIOS to unlock or configure any memory settings again, or will everything stay as it is?

Unlocking memory in BIOS usually refers to enabling memory profiles like XMP or EXPO. If you were using those before, chances are they’ll stay enabled, but it's always good to double-check after installing new sticks.
It's possible your system might disable the XMP/EXPO profile after recognizing the new RAM modules. If that happens, it would revert to the basic settings supported by all installed modules. Just keep an eye on the BIOS settings after the upgrade!
