Realistically, a regular person won't be able to retrieve those files. However, authorities or hackers with the right tools might have a chance, but saying it’s ‘easy’ is a stretch.
It really depends on the type of phone. In some cases, a data recovery specialist might still manage to access old files since the data can sometimes remain on the drive even though it's not visible. But keep in mind, this can be pricey and isn't guaranteed to work.
The short answer is probably not, especially if your phone has always used encryption, which became standard around 2014. If the reset ran TRIM too, that would make recovering files even harder.
Generally, it's tough to recover files after a factory reset. Most phones will wipe the data pretty completely, and unless you have cloud backups, you might be out of luck.
