I'm considering upgrading my current graphics card from a Gigabyte 5060Ti with 16GB to an XFX Mercury OC 9070XT. My budget allows for something in the mid-high $700 range. I'm particularly concerned about whether my PSU wattage (800W) will be enough, and if my CPU (7600X) might bottleneck the performance of the 9070XT. Should I also think about upgrading my CPU along with the GPU? I'd really appreciate any advice!

Yeah, your PSU seems good enough! If you're planning to play games, the 9070XT will definitely give you a performance boost. But if your main use is for video editing, sticking with Nvidia might be a safer option, especially if your editing software relies on their CUDA cores.
Your power supply should handle the upgrade just fine along with your current CPU. You shouldn't face any major issues there!
