Best Distro for Plex Server and Docker Setup

I'm transitioning from an old PC running Linux Mint with Plex to a mini PC with an 11th Gen i7. I'm planning to set it up as a Plex server for a few users and want to learn about Docker for better management. I'm considering Ubuntu, but I've also heard about CasaOS recently. I'd like to know if anyone has recommendations for a suitable distro, guides for setting up Plex with Docker on Ubuntu, and if CasaOS can work alongside a desktop environment since I do some development work that requires a GUI like BlueFish.
