I recently bought a Kingston Fury Beast 2x16GB DDR5-5600 CL36 kit for a system built around a Ryzen 7 7800X3D and a Gigabyte B850M Gaming X WiFi 6E motherboard. A friend has a matching DDR5 kit and is considering upgrading from 32GB DDR4 to 64GB, so I could buy his kit and sell my current 2x16GB DDR4 set when I finish upgrading.
I may benefit from 64GB because I do video generation and sometimes keep many browser tabs and other programs open. However, I've heard that using four DDR5 modules can reduce the achievable memory speed and cause boot or stability problems. Would four sticks be a sensible upgrade, or would I be better off staying with two modules?

For a Ryzen 7 7800X3D, two DIMMs are usually preferable for the best chance of running DDR5-5600 with tight timings. Four modules may still perform perfectly well, but the system could automatically fall back to a lower setting, and the real-world gaming difference is usually small compared with the benefit of having enough memory. If 32GB is already enough for your normal workload, keep the two-stick setup; if your video work and multitasking regularly exceed 32GB, capacity is more valuable than a modest memory-speed reduction.
If you genuinely need 64GB, four sticks can work, but it puts more stress on the memory controller than two sticks. You may have to run the RAM below its advertised 5600 MT/s, and stability or longer memory training on boot is more likely. A matched 2x32GB kit would generally be the cleaner option, but given how cheaply you obtained the current kits, trying four sticks is reasonable as long as you’re willing to reduce the speed if necessary.
That makes sense. My main concern is whether the slower speed would noticeably hurt gaming performance, rather than just being a benchmark difference.

I’d test the four-stick configuration with a memory stress test. If it is stable at 5600 MT/s, great; if not, lowering the speed or relaxing timings is preferable to forcing an unstable overclock.
