I recently reapplied the thermal paste on my AMD Ryzen 7 5700X, which is cooled by a Cooler Master Hyper 212 Halo. With no applications running, the CPU sits around 38°C. When I play Detroit: Become Human to put it under load, it reaches about 54°C. I'm new to building PCs, so I'm wondering whether these temperatures are normal or if I should be concerned about the health of the processor.

That’s very cool for gaming. Many Ryzen CPUs run in the 40s at idle and somewhere in the high 50s or 60s during games. It generally only becomes worth investigating when temperatures are consistently approaching the mid-80s Celsius or higher.
Those temperatures are excellent. Around 38°C at idle and 54°C while gaming is comfortably within the normal range for a Ryzen processor. You have nothing to worry about.
Exactly. Modern CPUs are designed to protect themselves if they get too hot, and temperatures below thermal-throttling levels are completely safe.
