The folder at C:Users[username] includes personal information that I would rather not expose, especially when displaying file paths to other people. Is there a safe way to rename that folder without breaking Windows, applications, or personal files?

The safest approach is to create a new Windows account with a generic username, then copy your documents and other needed files from the old profile. After confirming everything works, you can remove the old account and its sensitive data. This is generally the best option on Windows 11.
There are migration tools that can move a profile, including Microsoft's User State Migration Tool and some commercial utilities, but they require more technical knowledge. For most people, creating a new account and transferring files is simpler and safer.
A local account with a nondescript name works well if you do not want your Microsoft account name reflected in the profile path.
