I just got an ASUS Prime OC 9070XT, which has three 8-pin power connectors. However, my power supply unit (PSU) is a Cooler Master 850W MWE V3, and it doesn't come with three dedicated 8-pin cables. Right now, I'm using one cable that splits into two 2+6 pin connectors and another one that does the same, with one of the 2+6 pins just left unplugged. Is this setup okay? I know it's best to have three separate 8-pin cables, but will this configuration damage my GPU?

You're good to go! Just keep an eye on the temps and performance in case you decide to overclock it later on. If you push the card further, you might want to think about upgrading to a PSU with three dedicated connectors, though.
Your setup should be fine for general use. As long as the GPU is getting enough power, you shouldn't run into issues.
Yeah, it’s a decent setup! No need to stress over it too much.
It might not be ideal, but your current setup won’t harm anything directly. Just make sure everything runs smoothly and consider upgrading if you start pushing the GPU's limits.
Really? Is it that big of a deal for overclocking?
