It's important to note that this isn't an RDP or Terminal Services server, but rather an application server that produces reports in the background. Can anyone clarify what type of Office license would be necessary for this setup?

If your team isn't directly running Word or Excel, but rather it's a background task, you’d probably need the Office 365 Apps for Enterprise Unattended license. Don't forget, you'll also need Windows Server CALs if you haven't purchased those yet.
Office licensing generally depends on the user or the device accessing it. If you're compliant, you might not need a license for the reports since it falls under multiplexing. Just make sure to check which libraries your app is using to ensure everything is in order.
