It has a decent spec for its age: 8GB of RAM, a 2GB AMD graphics card, an i5 6th gen processor, and a 1TB hard drive. I'm open to any suggestions!

Consider trying Puppy Linux; it works wonders on older machines that struggle to run modern systems. And before you do anything, just remember to move all that important data to removable storage first!
First off, definitely back up all your important data to either a physical hard drive or a cloud service like OneDrive. After that, you could reset the laptop and repurpose it as a media device. It's not powerful enough for gaming but could still be sold for a bit or donated to someone who needs it, like a family or school.
If the laptop has a CD/DVD drive, you could rip your old CDs and DVDs and set up a Jellyfin server for streaming. Or, if you're feeling adventurous, back everything up and install Linux Mint or Fedora for a performance boost.
