I kept many groups of tabs open in Edge on my phone so I could return to ongoing research whenever I wanted. I recently discovered that Edge automatically closes inactive tabs after three months, and several groups—possibly 10 to 20—have now disappeared. I changed the setting to prevent this from happening again, but is there any way to restore the closed tab groups? The pages may still be somewhere in browsing history, but I visit dozens of sites every day, so finding older pages individually would be extremely difficult.

Open Edge's settings and disable the option that automatically closes inactive tabs. That will prevent future losses, but it only changes the behavior going forward and does not restore groups that were already closed. For research that needs to remain available, saving pages to bookmarks or Collections is safer.
There does not appear to be a way to restore the inactive tab groups themselves once Edge has automatically removed them. You may be able to find some of the individual pages in browsing history, but the groups, ordering, and organization are probably gone. For anything you want to keep long-term, use bookmarks or Collections instead of inactive tabs.
