I'm planning to upgrade my GTX 1650 to an RX 6700 XT. My current system has an Intel i5-11400F, 16GB of DDR4-3200 RAM, an H510M-H motherboard, and a 600W FSP Hydro M Pro power supply. Would 600W be enough for this setup, or should I upgrade the PSU as well?

That should be fine. The RX 6700 XT can draw roughly 200–240W in some games, but the i5-11400F and the rest of your components are relatively low-power. As long as the PSU is in good condition and has the required PCIe power connectors, 600W should handle it.
AMD recommends a 650W PSU, but that recommendation has to account for systems with much more power-hungry processors. An i5-11400F typically uses far less power than those high-end CPUs, so your particular build should be within the limits of a decent 600W unit.
