I'm currently running a Core i7-12700K with fast DDR4-3600 CL14 memory. Before memory prices started climbing, I bought a DDR5-7600 CL36 kit using M-die chips, planning to wait until next year for a newer Intel platform. Now I'm tempted by a bundle deal that would give me a 270K and a Gigabyte Z890M Aorus motherboard for about $470 out the door. Since I mainly game at 4K, would this be a worthwhile upgrade, or should I keep my current system and wait for the next generation?

The upgrade can make sense if you can sell your current CPU and platform for a good price and reuse the DDR5 kit. One builder made a similar move from an older 5900X to a newer Intel chip and gained roughly 40% in both multicore and single-threaded performance, while spending very little overall. That kind of value is different from paying the full $470 just to move from a 12700K.
I’d hold off. Moving from a 12700K with fast DDR4 to this platform would probably feel more like a side-grade than a major gaming upgrade, especially at 4K. Waiting for the next Intel or AMD generation should give you a clearer performance jump and potentially better memory support. The only reason to buy now is if you really want to use the DDR5 kit immediately or the bundle is unusually good after selling your existing parts.
At 4K, your graphics card will limit performance in most games, so the 12700K is still plenty capable. I’d keep it for another generation unless you specifically want to experiment with the new platform. If you do upgrade mainly for gaming, a newer X3D chip may offer a more noticeable benefit.
That comparison involved a much older CPU, so the performance jump was far larger than what you’d likely see from a 12700K. Your current system is still relatively strong.
