I game at 1440p and 240Hz with an RTX 5060 Ti 16GB, mostly playing CPU-heavy titles. Would upgrading from my i5-14400F to an i5-14600K or i7-14700K provide a worthwhile improvement, especially for frame rates and 1% lows? I'd prefer not to replace my motherboard, so I'm limited to processors using the LGA1700 socket.

I’d keep the 14400F for now unless you have a specific game where it is clearly holding you back. Spending roughly a few hundred dollars on another LGA1700 processor is a fairly limited upgrade path, so saving for a newer platform later may offer a better long-term improvement.
The 14600K probably isn’t worth the cost. It can be faster, but the improvement varies a lot by game and may be fairly small at 1440p. The 14700K offers more headroom, but only makes sense if you can find one at a good price and your games are genuinely CPU-limited.
Before upgrading, check what is actually limiting performance. At 1440p, the graphics card is often the bottleneck, even with a high-refresh-rate monitor. Depending on the game, the 14600K may provide anywhere from almost no improvement to around 25% more performance, with the biggest benefit sometimes showing up in the 1% lows rather than average FPS.
Exactly—1440p generally reduces the need for additional CPU headroom unless the GPU is already being underutilized or the frame-time dips are bothering you.
For gaming, the 14600K is usually the more sensible choice between those two. The 14700K does not provide enough extra gaming performance to justify its higher price in most cases.
