I'm currently using a Ryzen 7 2700X that I bought in 2019, paired with an EVGA RTX 3070 from 2021. The Ryzen 5 5600X3D is available locally for $179, so I'm wondering whether its gaming performance makes it worth upgrading now or if I should wait.
I mainly play Football Manager 24, though I may return to Elden Ring and eventually try the Spider-Man games and Marvel Tokon. I might also buy Football Manager 27 if it turns out well. I used to edit videos in Premiere Pro, but I rarely do that anymore. The Ryzen 7 5800XT is only about $20 more, so I'm also trying to decide which processor would be the better choice for my mix of gaming and occasional productivity work.

The 5800XT would be the safer choice if you expect to return to heavy Premiere Pro work, but for your current usage the 5600X3D is the better fit. You may also be able to sell the old processor for around $40–$50, which would reduce the upgrade cost.
For gaming, I’d choose the 5600X3D. The extra cores on the 5800XT generally aren’t as useful for games as the additional 3D V-Cache, and the 5600X3D should be stronger for Football Manager and the other games you listed.
The 5600X3D is the better gaming chip, while the 5800XT makes more sense for productivity tasks such as video editing. Since you hardly edit anymore, the small productivity advantage probably isn’t worth giving up the gaming performance.
Either 3D-cache option would be a major step up from the 2700X. You should see higher average frame rates and noticeably better 1% and 0.1% lows, especially in CPU-heavy games.

That makes sense. I haven’t edited videos in years, and even if I eventually return to it, the difference probably isn’t enough to outweigh the gaming benefits of the 5600X3D.
