I'm deciding between the Ryzen 5 9600X and Ryzen 5 7600X for a 1440p gaming build. The 9600X is currently on sale for $375 NZD, while the 7600X costs $379. I'm pairing the CPU with a 16GB RX 9060 XT and mainly want to play games such as Black Myth: Wukong and Clair Obscur: Expedition 33. Will six cores meaningfully limit performance, or is the 9600X a good match for this graphics card?

The 9600X is more than capable for 1440p gaming and shouldn't hold back an RX 9060 XT in any meaningful way. At that resolution, the graphics card is usually the limiting component, especially in demanding games. Six modern cores are still plenty for this kind of system.
You could pair the 9600X with a substantially faster graphics card and still get strong 1440p results, so it has plenty of headroom for the 9060 XT. Some older or unusually CPU-heavy games may behave differently, but for modern high-settings gaming the GPU will generally matter much more. Upscaling or frame generation can also make the experience smoother, though the underlying CPU performance is still adequate.
Between those two CPUs, the 9600X makes the most sense since it's slightly newer and actually costs a little less in your case. The performance difference over the 7600X isn't huge—roughly a few percent in many games—so price and availability matter more than the core count here.
If the prices were reversed and the 7600X was meaningfully cheaper, it would still be a perfectly reasonable choice. The 9600X is better, but not by enough to justify a large premium.
