I'm troubleshooting a Plex server that has experienced occasional freezes and recently stopped displaying video. The system uses an Intel Core i7-14700K with two DDR5 modules. Each module passes MemTest when tested alone, but testing both together produces errors within 5–7 minutes when memory overclocking is enabled.
With the BIOS at its defaults, both modules pass at 4800 MT/s. XMP-I causes errors quickly, while XMP-II initially worked at 5600 MT/s but later produced some errors as well. Increasing the speed to 6000 MT/s resulted in errors after roughly 15 minutes. Disabling XMP completely has produced no errors so far.
The BIOS was reset and updated, and the system is otherwise using default settings. Since the processor officially supports DDR5 speeds up to 5600 MT/s, I'm wondering whether the 6000 MT/s memory profile is simply beyond what this particular CPU and motherboard can reliably handle. Are there any BIOS or memory settings worth trying, or should I just leave XMP disabled? Stability matters more than the small performance gain for this Plex server.

The MemTest version is also worth checking. An older build may not detect every type of instability as well as a current release, so retesting with the latest version would be useful. However, the pattern you found is still pretty clear: both sticks work individually, the pair is stable at JEDEC defaults, and errors appear only with XMP. That points much more toward an aggressive memory profile than defective RAM.
XMP is still an overclock, even when it is enabled through a one-click profile. The advertised memory speed is not guaranteed with every CPU and motherboard combination, especially when using two DIMMs. Your system passing at the default 4800 MT/s but failing at 5600–6000 strongly suggests the memory controller or the particular CPU sample cannot maintain those settings reliably. Updating the BIOS is worth checking, but if the latest version still fails, running at the stable default speed is the sensible choice.
Make sure the BIOS is current, particularly with a 14th-generation Intel processor, since newer firmware can improve memory compatibility and address processor stability issues. Also use the motherboard’s recommended DIMM slots and verify that the memory kit is a matched two-module kit. Beyond that, you could manually try a lower speed such as 5200 or 5600 MT/s with conservative timings, but there is no guarantee that 6000 will work reliably.
Memory stability is partly a silicon-lottery issue. A kit rated for 6000 MT/s only guarantees that rating under the manufacturer’s specified conditions; it does not guarantee that every processor’s integrated memory controller will run it with two modules. XMP-I and XMP-II can also use different timings and voltage values, so one profile may appear stable while another fails. Since this is a server, error-free operation is much more important than the relatively minor Plex performance difference.
