I'm planning a PC build with a Ryzen 5 7600X3D and an RX 9060 XT 16GB. I recently tried an ultrawide display at a friend's place and really liked it, so I'm considering buying a 3440×1440 monitor. My main games would be Geometry Dash, Rocket League, Zenless Zone Zero, Genshin Impact, and Need for Speed Unbound. Would this setup run those games well, and would choosing an ultrawide monitor be worthwhile?

The answer depends on the exact resolution. 3440×1440 has considerably more pixels than standard 2560×1440, so demanding newer games can push the 9060 XT harder. For your current library, though, it should be perfectly usable and likely provide a smooth experience.
People are already using the RX 9060 XT 16GB at 3440×1440 with good results in fairly demanding games, including high settings. For Rocket League, Genshin, ZZZ, and the other games you mentioned, the card should be a good match for an ultrawide monitor.
If you can afford it, a faster card such as an RX 9070 would give you more headroom for several years. It is substantially faster and would be a better long-term choice, but only if it is reasonably priced where you live. Dropping from the 7600X3D to a Ryzen 5 7500F or 7600 could also free up money for the GPU.
For the games you listed, the RX 9060 XT 16GB should handle 3440×1440 quite well. You may not be able to run every future game at ultra settings, especially with heavy ray tracing, but medium-to-high settings should generally be realistic. FSR can also help when you want higher frame rates.

The RX 9070 isn't available in my country, and importing one would make it much more expensive. The closest option in my budget is an RTX 5060 Ti 8GB, while the next reasonably available models cost around $200 more.
