I'm planning a system with a Ryzen 7 9700X, Gigabyte B850M Eagle WiFi 6E ICE motherboard, Samsung 9100 Pro 2TB SSD, 32GB of G.SKILL Trident Z5 Neo DDR5-6000 CL30 memory, a Coolman Spectra mATX case, an ARCTIC Liquid Freezer cooler, an 850W Lian Li EDGE power supply, and six case fans. Can I use this build without a dedicated GPU, and would doing so cause any problems or risk damaging the system? I'd also like to know what limitations I should expect for gaming and other graphics-intensive tasks.

The build should work, but some parts seem overkill. A Samsung 9100 Pro is extremely fast on paper, yet most everyday applications and game loading times will not benefit much compared with a good mid-range PCIe 4.0 or entry-level PCIe 5.0 SSD. That money could be put toward a graphics card instead.
You can run the system without a graphics card temporarily, but it would be a strange choice for such an expensive build if you plan to game. A dedicated card is needed for good gaming performance. Even an older or reasonably priced card, such as an RTX 3060 or RTX 2070, would make the system much more capable.
If gaming is the main goal, consider balancing the budget around the GPU. The 9700X is capable, but a gaming-focused processor such as a 7800X3D paired with a suitable modern graphics card may provide better overall gaming value. Without a dedicated GPU, expect general-use performance rather than a practical gaming machine.
